Cherry Clafoutis

The gamble with fruits is that sometimes they end up being duds. Thus, a bunch of not-very-sweet cherries turned into a late night snack of cherry clafoutis.

Without requiring fancy ingredients, clafoutis make a great impromptu dessert with any fruit, chocolate, or spread you might have lying around. This portion is for one, but can be easily scaled up for sharing.

Ingredients

  • 1/2 cup of cherries, pitted
  • 7g unsalted butter, melted
  • 30g white sugar
  • pinch of salt
  • 1/8 tsp vanilla extract
  • 80mL milk
  • 20g all purpose flour
  • 1 egg
  • icing sugar, for dusting

Preheat the oven to 160C/325F.

Pit the cherries and place them in an oven-safe vessel.

Melt the butter and stir in sugar and salt. Whisk together the milk and vanilla until smooth. Add the egg and beat until incorporated, then add the flour and mix together.

Pour over the cherries and bake in the oven until it puffs up and has set completely, about 20-25 minutes.

Let it cool and then dust with icing sugar.
