During our last visit to Seoul, I had an orange latte at Bunkasha. The return of warm weather and in-season oranges brought up my determination to recreate it.
A bright, summery iced latte with sweet and tartness of fresh oranges.
Ingredients:
- orange segments
- sugar
- whole milk
- espresso
Note: I suggest whole milk as the higher fat content means it will curdle less when in contact with acidic fruit. This may not be an issue if using other milks, I found that oat milk didn’t curdle at all but the flavour didn’t match as well with orange.
Peel and segment your orange, making sure to leave a slice for garnish. Remove the pith and skin from each segment and place into a bowl.
Add equal parts sugar to the oranges, and lightly mix, until the orange segments have been broken up. Aim for a syrupy, thicker mixture and set aside.
In a tall glass, layer the orange mixture at the bottom. Add ice cubes, milk, and espresso. Top with orange garnish and a sprig of thyme.
